Description

Rye bread is an excellent option for those wanting a calorie-conscious diet. Rye not only contains many important nutrients, it can also keep hunger pangs and cravings at bay as it leaves you feeling satisfied and full for a long time. The "Heimatliebe" baking mix by Berghofer Mühle is a quick and easy way to bake your own fresh rye bread at home - without preservatives or artificial flavours. Suitable for the oven as well as the bread machine.

In addition to the baking mix, you will need the following fresh ingredients:
9 g dry yeast or ½ cube fresh yeast, about 500 - 515 g lukewarm water.

Method:

  • Stir the yeast into the lukewarm water in a bowl
  • Add the baking mix and knead briefly
  • Food processor: Knead for 7 – 10 min.
  • Place the dough on a floured work surface, cover and let rise at room temperature for approx. 45 minutes
  • Shape the bread dough into a round or oval shape and place in a floured proofing basket
  • Cover the dough and let it rise again for about 30 minutes
  • Preheat the oven (convection, 230 °C)
  • After the rising time, turn the dough out onto a preheated hot baking tray or pizza stone and place in the oven
  • Immediately after, sprinkle water on the hot oven floor to generate steam
  • Bake for 10 minutes at 230°C. Reduce the temperature to 180 °C/185 °C and bake for a further 40-45 minutes
  • If the bread sounds hollow when tapped on the bottom, it is ready
  • Cool completely on a wire rack and enjoy!

One pack of the baking mix makes around 1 kg bread.
