Description
German packaging: Bio Burger Buns aus Briocheteig mit Sesam
A really good burger needs a really good bun! Once you've had these fluffy, soft,organic burger buns made from brioche dough and sprinkled with sesame seeds, you'll surely agree!
The baking mix contains the best organic ingredients from Austria. The mix does not contain any GMO ingredients, artificial flavours, colours, preservatives or palm oil. With just a few fresh ingredients, you can create perfect, golden brown burger buns that will make you the star of the next BBQ!
For 5 super-soft brioche buns (100 g each) you need:
- 1 baking mix
- 2 eggs
- 30 g soft butter
- 45 ml of milk
- 150 ml of water
- 1 egg yolk + 1 tbsp milk for brushing
Resting time for the dough: a total of 60 - 120 minutes
Baking time:
- Oven: 15 min at 190 ° C + approx. 9 min at 170 ° C (convexion)
- Grill with pizza stone: 15 - 20 min at approx. 200 ° C (indirect heat, closed lid)
Instructions:
- Take the bag with the sesame seeds out of the can and set it aside for the time being. Open the freshness seal and pour the baking mixture into a large bowl.
- Heat 30 g butter in a mixture of 45 ml milk and 150 ml water (the marks in the jar will help you measure) in a saucepan or in the microwave (approx. 30 seconds). When the butter has melted, set aside and let cool down a bit. Stir two eggs into the lukewarm liquid.
- Carefully pour the liquid over the baking mixture and knead everything for approx. 4 minutes to form a smooth dough (knead by hand or with a machine)
- Cover the bowl and place in a warm place (approx. 24 ° C). Let the dough rise for 30-60 minutes - it should double in size.
- When the dough has risen enough, shape it into a ball on a floured work surface. Try to knead it as little as possible. Use a dough scraper to divide the ball into 5 equal pieces, then roll each piece into a ball.
- Place the balls on a baking sheet lined with parchment paper. Whisk an egg yolk with 1 tablespoon of milk and brush the buns with the mixture. Cover the balls with plastic wrap and let them rise for another 30-60 minutes in a warm place.
- Meanwhile, you can preheat the oven (190 ° C convection) or the pizza stone on the grill (200 ° C indirect medium heat).
- When they have risen, brush the buns one more time with the egg wash and sprinkle with the sesame seeds.
- In the oven: Bake the buns in the preheated oven for about 15 minutes. Then reduce the heat to 170 ° C and bake the buns for another 9 minutes until they are golden brown. Remove from the tray, let cool down a bit and top with the patty of your choice and your favourite ingredients.
On the grill: dust the preheated stone with flour and spread the buns on top. Bake the buns on the indirect zone of the grill with the lid closed at 200 ° C for about 15-20 minutes.As soon as they are golden brown, remove them from the pizza stone, let them cool down briefly and fill with the patty and your favourite ingredients.
Tip: You can also bake the brioche buns in advance and freeze them. Thaw in the microwave for three minutes, cut in half and briefly toast with the cut surface facing down in a pan.
