Description

A classic loaf of bread made with spelt sourdough - enjoy the aroma of freshly baked bread in your own home! All ingredients are non-GMO and sourced from Austrian organic farming. The vegan recipe has been carefully developed by Bake Affair and is free from artificial additives. The flours used in the baking mix are ground exclusively in the Stöber flour mill.

For a small loaf (500 g) you will need:

  • 1 tin Organic Farmer's Bread baking mix with organic spelt sourdough
  • 210 ml water

Resting time for the dough: 105 - 120 min in total

Baking time: approx. 10 min at 230 °C + about 20 min at 190 °C (top/bottom heat)

Method:

Open the can and transfer the contents to a large bowl. Fill the can up to the waterline (210 ml) with lukewarm water and carefully pour it over the baking mix. Knead to make a dough by hand, in a food processor or in a Thermomix for about 3 minutes.

Cover the bowl and let the dough rise in a warm place (about 24 °C) for approx. 45 - 60 min.

Dust some flour on your work surface and proofing basket, if you have one.

Place the dough on the work surface. Fold in the edges towards the center and shape it into a ball with a bench scraper. Place the dough ball in the proofing basket with the bottom facing down or on a baking tray lined with baking paper.

Dust the dough with flour and rest, covered, for about 60 minutes.

While the dough is rising, preheat the oven to 230 °C (top/bottom heat).

Turn the dough out onto a baking sheet or bread baking stone. With a sharp knife, score deep cuts to let steam produced while baking to escape.

Bake for 10 minutes at 230 °C. Then turn the heat down to 190 °C and bake for a further 20 minutes. When the bottom of the loaf turns brown, it's done!

Take out of the oven and cool completely on a wire rack before slicing. Enjoy!
